Cruciferous vegetables like cauliflower, broccoli, brussel sprouts and cabbage when left chopped for 40-45 minutes before cooking, release ‘sulforaphane’ which is considered beneficial for health.

Sulforaphane and its health benefits

In scientific terms, Sulforaphane is a compound that belongs to a group of phytochemicals called isothiocyanates. It's found in cruciferous vegetables like broccoli, cabbage, cauliflower, and Brussels sprouts. When these vegetables are chopped, chewed, or otherwise damaged, an enzyme called myrosinase converts a precursor compound called glucoraphanin into sulforaphane.

Sulforaphane is rich in antioxidant and anti-inflammatory properties. Studies have proved that sulforaphane may help in reducing the risk of certain chronic diseases, such as cancer, heart disease, and neurodegenerative disorders.

Health benefits of eating cruciferous vegetables

Digestive Health: The fiber content in cruciferous vegetables promotes digestive health by supporting regular bowel movements and preventing constipation.

Bone Health: Cruciferous vegetables are good sources of calcium, magnesium, and vitamin K, all of which are essential for bone health. Vitamin K is particularly important for bone metabolism and helps maintain bone density.

Anti-Inflammatory Effects: Compounds such as sulforaphane and glucosinolates in cruciferous vegetables also help reduce inflammation in the body. By including cruciferous vegetables in your diet, you may help lower inflammation levels and support overall health.
