Pascarella, a skilled pizzaiolo from Chiswick who started making pizzas at the young age of 11, established Napoli on the Road four years ago, operating as a mobile food truck in various markets across London.
While his menu features beloved classics like margherita and pepperoni, it's his signature&nbsp;creations that truly captivate diners. These special pies boast toppings like 24-month-aged parma ham, tuna fillet, and lamb-based ragu sauce.
Pascarella, celebrated as a trailblazer in contemporary pizza-making, has garnered numerous awards, including the prestigious title of Pizza Maker of the Year 2023 awarded in May.
In addition to crowning Pascarella, the World 50 Top Pizza also recognised the finest pizza establishments globally. Combine 100 ml tomato puree, 1 tsp roughly chopped basil and 2 crushed cloves of garlic in another bowl.
Step 3
Take the dough and knead it once more. Roll it out flat with the help of a rolling pin. Place the base on a baking sheet.
Step 4
Heat the oven to 240 degrees Celsius. Spread the prepared sauce on the base evenly. Grate 125g mozzarella cheese and some parmesan cheese over the base. Add some roughly chopped cherry tomatoes and some olive oil. Bake for 9-10 minutes. Serve hot.
