According to research published in the journal Diabetes Care, people with the highest potato consumption have a 9% increased risk of developing Type 2 diabetes.

For the study, team analysed dietary patterns of 54,000 participants aged 50-64 for 12 months. They found that people who consumed boiled potatoes had a 21% lower risk of developing type 2 diabetes compared to those who ate fried or mashed potatoes.

The way potatoes are prepared plays a major role when it comes to diabetes, researchers concluded.
