This Diwali switch your box of kaju katlis with a plate of jiggly coconut chocolate pudding. Here is a simple and easy recipe.

How to make coconut chocolate pudding

Ingredients

1/4 cup cornflour
2 cups milk/coconut milk
1/4 cup sugar
3 tbsp cocoa powder
1/4 cup desiccated coconut

In a bowl, whisk together cornflour and 1/2 cup milk until smooth and lump-free. Set this mixture aside. Now, in a heavy bottom pan, combine the remaining 1+1/2 cups of milk, sugar, and cocoa powder on medium heat. Whisk until the mixture is well combined. Once the sugar has dissolved, add the cornflour slurry while whisking continuously.

Make sure to continue, whisking until the mixture comes to a boil and thickens in a way that it coats the back of a spoon. 

Remove from heat, pour into a greased round bowl and chill in the refrigerator for 1-2 hours. 

Demould and decorate with desiccated coconut.
