Sweeter than their spicier pepper cousins, bell peppers are a highly versatile vegetable group. You can eat them raw in a salad, roast them or add them to soups, noodle dishes and much more! 

Sometimes referred to as capsicum or sweet peppers, they are very low in calorie but rich in nutrients like vitamin C and other antioxidants. 

You can find them in a range of colours like red, yellow, green and orange. Interestingly, some studies have shown that red peppers, in particular, have the most amount of nutrients of the group.

Bell peppers are loaded with over 30 different types of carotenoids including beta-carotene that converts into vitamin A. Carotenoids are the phytonutrients that give foods their different bright colours. 

They are so rich in vitamin C that one medium-sized bell pepper can account for almost 200% of your daily vitamin C intake.

Together, the rich combination of these antioxidative vitamins makes bell peppers great food for promoting healthy vision. They also help protect the body from the harmful effects of free radicals generated during stress and disease conditions. 

Last but definitely not the least, bell peppers are also good sources B-complex group of vitamins. B vitamins have a direct impact on your energy levels, brain function, and cell metabolism. They can also help prevent anaemia and help stabilise your mood!
