The plastic chutney could easily be called Bengal's hidden kitchen secret but it's really not what you think. The texture of this sweet and spicy chutney looks like melted plastic and that's how it got its name. It is made with raw green papayas and lots of sugar. When slices of raw papaya are cooked with sugar and lime juice, they caramelise and turn glossy and translucent. Later, mustard and whole red chillies are added for a spicy kick. The chutney is usually prepared during wedding and other celebratory occasions.
