This Karnataka-style pongal needs 3 cups rice, ¼ cup moong dal, and water. For tempering get 2 tbsp ghee, 1½ tsp cumin seeds, 1 tsp crushed black pepper, 1 green chilli, ¼ tsp hing, 1 tsp grated ginger, 1 tbsp cashew nuts, a few curry leaves.
To make this easy dish you should start by washing the rice and moong dal together. Transfer to a pressure cooker, add 3/4 cup water, and cook for three whistles. Meanwhile, in another pan add ghee, cumin seeds, black pepper, green chilli, ginger, curry leaves, and hing. Saute and then add a few cashews. Saute this mixture some more and then add it to the cooked rice and dal. Add salt, give a good mix, and dig in! Make sure to enjoy this dish piping hot.
