If there is one thing that without which the festival of colours seems incomplete, it has to Gujiyas. It is a traditional North Indian dessert and is made with khoya, flour, semolina, sugar, almonds and cardamoms. The filling is soft while the exterior of this dessert is flaky and crispy.

Step 1
Combine 3 cups of refined flour with 1 cup water and 1 cup of clarified butter. Knead it to make a dough for the Gujiyas.
Step 2
Once the dough is ready, cover it and keep it aside for around an hour. Saute 350 grams khoya and ¼ cup semolina in a pan.
Step 3
Mix 1 cup sugar with 1 tbsp chopped almonds and 1 tbsp green cardamom. Add this to the khoya mixture.

Make small balls from the dough and fill it with the prepared almond mixture. Seal the sides and give it a cup-like shape. Fry in ghee till they turn brown. Serve hot.
