Americans experiment with nose-to-tail eating

While the rest of the world has been eating nose-to-tail for years, the Americans are just about opening up to the idea. Unconventional cuts of meat are now slowly being experimented with in different menus around the US. As food lovers become more adventurous with their palette, cuts such as calf brains, pig snouts, pig ears, beef cheeks and even rabbit kidneys are making their way into cuisines.
